If they ask you about the cold soup, what will you tell me? Gazpacho! Of course, this specialty, recognized throughout Europe, comes from the beautiful region of Andalusia. What better than a cold soup to cool off during the hot days you’ll spend there. Made from mixed raw vegetables, mainly tomato and cucumber, and seasoned with olive oil and garlic, it is perfect for the summer season, (and even all year round), with a piece of bread. If you have never tried it, and even if you have already eaten it, it is a necessary part of your stay in Spain.
Speaking of cold soup, we have an alternative for those who want a richer dish. In fact, it’s more of a thick cream than a soup: the Salmorejo. It is based on soft bread and is very similar to gazpacho because only tomato, garlic, olive oil and salt are added. Served cold, not to be covered with ingredients such as hard-boiled egg croutons or chunks of ham.
After this very light dish we continue with the fried fish. A mixture of several fish bites, it is a dish that is made to be shared with your loved ones. It looks a lot like French toast: you soak some hard bread in milk with sugar and cinnamon, the bread becomes fluffy. It is then immersed in an egg and finally fried in oil. Once baked, it can be served with honey, a ball of vanilla ice cream or sprinkled with cinnamon. A rich but delicious dessert that will warm your heart! A perfect family dessert.
On a lighter note, let’s move on to the second sweetness: sky bacon. A cream, which looks a lot like custard, with its very characteristic golden color. This recipe was very popular at the time because it was very cheap and consisted only of egg yolk, sugar, water and some citrus peels. Easy to learn and do, we put a recipe here for those who want to try it, although a course in Spain is still the most effective way to learn. Lighter than the toast but just as delicious, enough to enjoy without feeling too guilty.
