A land with resources and character
Today we’re heading for the Basque country! For you, cooking enthusiasts, and for those of you who don’t know where you want to do your internship, we will continue our gastronomic tour of Spain with this autonomous territory, extended from Spain to the French Pyrenees. Between land and sea, a mixture of Spanish, Béarnaise and gastronomic flavours, if you like varied and refined cuisine, we strongly advise you to do your internship in the Basque Country! A mix of tomatoes, ham, cheese and olive oil. The Basque country has a lot of specialities, we could talk about Espelette chilli pepper, Basque cheese or Bayonne ham, but today we will focus on the dishes.
The pinchos (pintxos). These are Spanish tapas, but in Basque version. You take any type of dish and you prepare them in miniature version. This practice has become a real art and is subject to many neighborhood contests. Between mini skewers, ham sandwiches or tortilla, they are diverted into many recipes that will satisfy any type of palate.

The piperade! A mixture of golden vegetables in a terracotta pot, it is the main ingredient of this dish and even gave it its name, piperade in Basque being the chilli pepper. So chilli fans, a gastronomic course in the Basque Country is a perfect opportunity for you! In this recipe, we use red and green chilli pepper, to which we add onions and tomato for extra flavour. Because the dishes are like the region, strong in character.
Let’s move on to a fisherman’s dish: El Ttoro! A very popular fish soup, it is usually made with hake, shellfish such as langoustine, mussels and espelette pepper. And the speciality of this soup is that the pieces of fish remain whole, they are not mixed as in traditional Mediterranean soups. However, depending on the occasion of the day, you can find any kind of fish: eel, monkfish or scorpion fish.
Let’s move on to the last, but not least, speciality of the day: Basque cake. I’m sure you’ve heard of this cake before. Made with a fine dough, it has the shape of a crispy cake and is filled with custard or black cherry jam. Once reserved for Sunday meals and special occasions, it can now be enjoyed whenever you like. A pleasure for sweet beaks (like us).
